Blueberry Grunt
Ingredients:
1 quart of blueberries
1/2 cup of water
1/2 cup of sugar
Boil blueberries, water and sugar in a saucepan until there is
plenty of juice.
Sift together 2 cups of flour, 2 tsp of baking powder, 1/2
teaspoon of salt and 1 tsp of sugar. Add 1 tbsp of butter and
sufficient milk to make a soft dough (approximately 1 3/4 cups of
milk). Drop dough by tablespoons over berries, cover and cook for
15 minutes.
This is good and relatively quick for when unexpected guests
arrive.
Blueberry Buckle
Ingredients:
1/4 cup of shortening
1/2 cup of sugar
1 egg
pinch salt
1 cup flour
1 1/2 tsp baking soda
1/3 cup of milk
Mix and place in 8x8 pan. Spread with 1 pint of blueberries.
Sprinkle with following mixture.
1/2 cup sugar
1/3 cup of flour
1/2 tsp cinnamon
1/4 cup butter
Bake in 350 degree oven until done.
Sugar Pie (tarte au sucre)
Fill a 9-inch uncooked pie shell with a half inch of brown or
maple sugar. Sprinkle with 3 tablespoons cream and dot with 2
tablespoons butter and cover with a lattice top. Bake at 400
degrees F from 35 to 45 minutes.
Molasses Cookies (biscuits a la melasse)
Sift together
2 1/2 cups flour
1/2 teaspoon soda
1/4 teaspoon ginger
1/2 teaspoon cinnamon
1/8 teaspoon each of cloves, allspice and nutmeg
Beat in
1/2 cup shortening
1/2 cup sugar
1 beaten egg
1/2 cup molasses
1/2 cup milk
1 tablespoon vinegar
Chill and roll out very thin, cut in fancy shapes. Bake on
ungreased sheet at 375 F for 10 to 12 minutes. These make very
nice gingerbread men.
