African Groundnut (Peanut) Stew
Ingredients:

1 chicken, cut into pieces (optional - leave out if you want the stew to
be vegetarian)

Salt and Pepper
-
Ground red pepper
-
Peanut oil
-
1 medium onion, sliced
-
4 scallions (spring onions), chopped
-
2 tomatoes, chopped
-
½ teaspoon thyme
-
2 tablespoon peanut butter, or ½ cup crushed peanuts
-
Cooked rice
Method:

Season chicken with salt, pepper, and red pepper.

Fry chicken in peanut oil until brown. Set aside.

Fry onion, scallions, tomatoes and thyme in peanut oil until cooked through.

Add peanut butter to vegetables and stir thoroughly.

Add chicken.
-
Cover and simmer for 45 minutes. If stew dries, add water and more peanut
butter.

Serve over cooked rice.
