Real Tortilla Chips from Costa Rica


Ingredients: 4 corn tortillas; 2 tablespoons (30 ml) vegetable oil; salt; either salsa or guacamole.
Makes one small basket.
(Corn tortillas can be found in the refrigerator section of your grocery store)

The traditional way to cook tortilla chips is in a frying pan filled with 1/4 inch of vegetable oil until golden brown on both sides. Lay them on paper towels to remove excess oil before serving. A healthier way is to bake them in the oven.

1. Preheat the oven to 400F (200C). Place the tortillas one at a time, on a cutting board. Cut them pie style, into 6 triangles.
2. Pour the oil onto a small plate. Lightly brush oil on both sides of the triangles with a pastry brush or the back of a spoon. Arrange the triangles in a single layer on a baking sheet.
3. Bake the tortilla chips for 4-8 minutes or until they turn golden brown and crispy. Watch closely - tortillas cook very fast in hot ovens! Remove baking sheet from the oven with pot holders, and sprinkle the tortilla chips with salt. Cool, and then serve with salsa or guacamole.

Tex-Mex Chips: Sprinkle the chips with chili powder or taco seasoning.
Nacho Chips: Sprinkle the baked chips with grated cheese, then bake for two more minutes or until the cheese has melted.
