Apple Cake from Denmark
Ingredients (serves 8):

4 oz (125 g) butter

1 cup (200 g) sugar

2 eggs
-
1 2/3 cups (200 g) flour

1 1/2 teaspoons (7.5 ml) baking powder

3/8 cup (1 dl) milk
-
2-3 apples, peeled, thinly sliced

Cinnamon
-
Sugar
Method:

In a saucepan, melt the butter and stir in the sugar.

Add the eggs.

In a separate bowl, mix the flour and baking powder together.

Add the flour mixture and milk into the saucepan, and stir thoroughly.

Pour half the batter into a cake pan (9-10 inch or 24 cm diameter).

Arrange one layer of apple slices on the batter, then pour the remaining
batter on top.

Dip the remaining apple slices in a mixture of cinnamon and sugar, and
arrange on top.

Bake the cake on the bottom rack of the oven at 356F (180C) for about 45
minutes.
