Fiji
Peanut Candy
Ingredients:
-
2 teacups milk
-
4 tablespoons treacle
-
2 oz butter
-
1 teacup chopped peanuts
Method:
-
Place milk, treacle and butter in a saucepan and boil for ten minutes.
-
Add peanuts, bring back to boil and continue cooking for about five minutes.
-
Test for setting by dropping a tiny amount into ice cold water - if the
candy forms into a soft ball (like dough) it is ready. If it not ready,
continue boiling and testing.
-
Pour into a shallow, greased tin and allow to set.
-
When cold, cut into bars and wrap in waxed or greaseproof paper. Store
in an airtight tin.
