Hommus (Lebanon)


Hommus is a dip made from chick-peas (also called garbanzo beans or cecci). You can buy it in some grocery stores (refrigerated section), there are several good brands. Choose one with the least additives. Lemon juice is preferable to ascorbic acid.  It comes in many flavors, but plain is best.

To make your own:

Method:

Drain one can of chick peas, but save liquid from the other. Put peas and liquid in food processor. Add tahini, oil, garlic and lemon juice. Process until almost smooth.  If too thick, add a bit more olive oil or water. Refrigerate until serving. Garnish with parsely.
