Melt butter, stir in flour, bubble one minute. Remove from heat, slowly stir in milk. Return to heat, cook, stirring till mixture thickens and boils. Add cheese, stir till melted and smooth. Mung down!
(I serve this with crusty bread, or baguettes - long skinny french bread)
I usually use emmentaler cheese (or Swiss Cheese) but young girls might find that too tangy - it has quite a distinctive flavour.
