Rösti from Switzerland


Rösti is a Swiss national dish. It is a bit like hash brown potatoes in the US, but better! Especially in the mountains, there are many regional variations on rösti using eggs, cheese, bacon, onion etc. This is a recipe for rösti that I learnt about while staying in Murren in the Jungfrau region of the Bernese Oberland mountains (near Our Chalet!). First phase:
Lightly boil potatoes in their skins. Leave to dry in a cool place for at least 24 hours, preferably 2/3 days.

Second phase:
Peel potatoes and grate into narrow strips. Heat butter/oil in a frying pan. Add potato strips, sprinkle with salt and mix well. Fry the resulting pancake like form at medium heat for 8-10 minutes. Turn over when the bottom is crispy brown, and add more butter/fat. Fry for another 8-10 minutes.

Third phase:
Top with fried egg / cheese. Onions or cubes of bacon can also be mixed under the potato strips.
