Halva from Turkey
Ingredients:

½ pint water
-
½ teaspoon lemon juice (fresh or bottled)

1 lb sugar

3 oz semolina
-
4 oz raisins or sultanas
-
4 oz chopped nuts (any type or selection)
Method:

Put water, lemon juice and sugar into a saucepan.

Bring to the boil, and when sugar is completely dissolved, add the semolina
by 'raining' it in slowly.

Keep cooking and stirring this mixture until it begins to thicken.

Add the raisins and continue to cook and stir until thick.

Remove from heat and immediately stir in the nuts.

Pour into a shallow, greased tin and leave to cool and set.

Cut into small pieces and serve as sweets.
Note: Halva becomes very sticky if left exposed to the air, so keep
covered.
