Recipes from Western Samoa
Stuffed Avocados
Ingredients:

2 avocados
-
½ cup diced pineapple
-
½ cup diced pawpaw
-
grated coconut (fresh is nicest if possible)
Method:
Cut the avocado in half and remove seed.
Fill the centre with diced pawpaw and pineapple.
Sprinkle with grated coconut.
Place on a lettuce leaf, serve with light dressing.
Pacific Island Dressing
Ingredients:

¾ cup coconut cream
-
1 teaspoon salt
-
1 teaspoon chopped onion
-
2 tablespoons lemon juice
Method:
Mix all ingredients together.
Breadfruit or Taro Salad
Ingredients:
-
3 cup cooked breadfruit or taro
-
1 cup cooked fish or/and meat, egg, chicken
-
½ cup cooked beans
-
½ cup sliced tomato
-
½ cup sliced cucumber
-
½ cup shredded cabbage
-
2 tablespoons chopped green onions
-
½ teaspoon salt
-
salad dressing to moisten
Method:
Combine all ingredients, mixing lightly with salad dressing.
Serve on lettuce leaf.
